How to make One Gallon (5 Litres) of Medium/Dry Apple Wine
Recipe to Make One Gallon (5 Litres) of Apple Wine
Apples 10lbs/4.5 kilos
Sugar 2 ½ lbs or 1 kilo
Citric Acid (1 teaspoon)
Pectolase (1 teaspoon)
White Wine Yeast (1 teaspoon)
Yeast Nutrient
(1 teaspoon)
1 Campden Tablet
Stoppitt (1/2 teaspoon)
Water
EQUIPMENT NEEDED TO MAKE ONE GALLON (5 LITRES) OF WINE
5 litre/1 gallon white plastic food grade bin and lid
5 litre/1 gallon demijohn either glass or plastic
Cork with hole and airlock
Fine nylon Straining bag
Syphon
Hydrometer/Trial Jar (Optional)
Wash and cut up the apples. Simmer for 15 minutes in 4 pints of water. Strain the liquid into a fermentation bin. Add the sugar and stir well. When cool add the yeast, pectolase, yeast nutrient and citric acid. Leave covered for 24 hours in a warm place 75oF (21oC). Then strain the liquid in to a demijohn and top up with cool boiled water up to the demijohns neck. Leave in a warm place to ferment for four weeks. There will be quite a lot of sediment at the bottom of the demijohn so rack off the sediment after this time and if the wine has finished fermenting add 2 campden tablets and 1/2 teaspoon of Stoppitt to each gallon of wine (the Stoppitt ensures no secondary fermentation so if you prefer a sweeter wine just add sugar.)Make sure the demijohn is topped up with its neck with cool boiled water.
Leave is a cool place to clear and mature for at least 3 months
