Hambledon Bard Barrel Co2 Cylinders Co2 cylinders are an optional item. Depending on how long the beer is in the barrel determines whether you will need to use one. Initially, you prime the barrel with granulated sugar, glucose or malt extract. This give the necessary secondary fermentation. Possibly half way down the barrel a vacuum occurs (no beer comes out of the tap), it is at this stage a Co2 cylinder is used to ensure the beer stays fresh right down to the last pint.
