Equipment and Ingredients to make 30 Bottles of Elderflower wine



White Wine Yeast Sachet
2 and 1/2 teaspoons of Grape Tannin (sufficient 16 galls)
5 teaspoons of Yeast Nutrient (sufficient for 16 galls)
10 teaspoons of Citric Acid (Or the rind and juice of 10 lemons instead of citric acid)
5 Campden Tablets (50 tablets)
Tub of Steriliser

(Just supply 5 kilos of white granulated sugar for a dry wine or 7.5 kilos of sugar for a medium dry wine)

Elderflower Wine Recipe (Makes 5 gallons/23 Litres of Wine)

Pick the Elderflower heads on a sunny day. Using a plastic graduated jug fill the jug loosely with freshly picked elderflower heads until you reach the 2 ½ pint mark on the jug. (The elderflower aroma can be very pungent so do not use more flower heads than recommended).

Place the elderflowers in a sterilised 5 gall/23litre white polythene bucket with the sugar, lemon rind (if using this) or citric acid and pour over 3.5 litres (6 pints) of boiling water. Stir well to dissolve the sugar and top up to the 23 litre mark (5 gallon) on the bucket with water.

When cool add the lemon juice (if using this), grape tannin, nutrient and finally the yeast.

Leave in a warm place, closely covered for four days. After four days strain the liquor through a fine straining bag into a 5 gall/23 litre  fermenter and place under cork and airlock.

The fermentation depending on temperature and should be complete within 6 weeks. Rack off any sediment at least once during this time. The wine will begin to clear. Using a hydrometer check the fermentation is complete and add 5 campden tablets.

Once clear, syphon the wine into glass wine bottles. If the wine is too dry add either wine sweetener or Sweetex (or similar) and adjust the sweetness.
