SPARKLING WINE YEAST This yeast from the Pasteur Institute is designed to produce sparkling wines and accordingly tolerates high levesl of alcohol. It is useful for restarting stuck fermentations or making dessert wines. It ferments well in the 12-30 degrees C range. Ideal for stronger sparkling wines, and higher alcohol dessert wines.
TO USE: Sprinkle onto the surface of the prepared wine 'must' (no need to stir).
